A Masterson favorite

Believe it or not, but I have mastered the art of cooking. Well, at least one meal. So much so that people went up for seconds and thirds and Jim even ate it as leftovers. So I will share the recipe.

Enchilada Casserole

1 1/2 ground turkey (or soy crumbles for vegetarians)
1 onion, finely chopped
1 package of taco seasoning
1 8oz. can of tomato sauce
2 cans of cream of chicken soup (or mushroom soup for vegetarians)
1 can chopped green chilies
1/2 cup milk
1 package corn tortillas
1/2 pound cheddar cheese (shredded)
1/2 pound monterey jack cheese (shredded)

Brown meat and onions. Add taco seasoning, tomato sauce, green chilies, soups and milk. Heat until bubbly. In greased casserole dish, layer tortillas, meat sauce and cheese. Repeat until out of meat sauce. End with cheese on top. Bake for 30 minutes at 350 degrees. Serve with tortilla chips. Enjoy.

Mackay goes mudding




At the recent neighborhood garage sale, I found the most perfect gift for Mackay. It is a pink Barbie Jeep with boombox. She is unable to reach the gas pedal to make it go, but she loves just sitting in it and listening to her bombox and pointing out the airplanes as the fly over. When she sees her Jeep in the garage, she lets out a squeel of excitement. Just wait until she figures out that the gas pedal makes it move.
